Making Grub with the Dub
Episode 46 – Potato Corn Chowder
Ingredients
1/2 lb bacon, diced and fried till crisp
2 Tbsp butter
3 medium potatoes, diced
2 medium carrots, sliced
1 large onion, diced
1 1/2 cups water
2 tsp salt
1/8 tsp pepper
2 cups homogenized milk
1 can cream corn
1/2 cup kernel corn
2 Tbsp cornstarch, dissolved in 1/2 cup milk
1/4 tsp soda, add to cornstarch
Instructions
Fry bacon until crisp, drain and set aside. In large frying pan, put butter and add all diced veggies. Sauté for about 10 minutes. Add water, salt, pepper and bacon. Cover and simmer until veggies are tender, about 20 minutes (water should be almost boiled away). Add both kinds of corn and milk. Bring to simmer. Add cornstarch mixture and let thicken, stirring gently. Should be consistency of heavy cream. Add more milk if necessary. Taste. It may need more salt and a slight sprinkling of garlic salt.
