Lemon Chicken Rice Soup
1 ½ to 2 cups chopped chicken or turkey
4 cups homemade chicken or turkey broth (or 4 cups water with ¼ cup chicken soup base)
½ cup cooked rice
⅓ cup freshly squeezed lemon juice
1 cup of milk thickened with 2 tbsps of cornstarch
Fresh dill
Add chopped meat, broth, dill, rice and lemon juice in a saucepan. Heat for about ½ hour. Add milk and cornstarch a few minutes before serving to thicken.
