Episode 63 – Mini Egg Cracker Toffee
Ingredients
1 cup butter
1 cup brown sugar
40 soda crackers
6 oz white chocolate candy melts
6 oz milk chocolate candy melts
½ cup Mini Eggs chopped
Instructions
Preheat the oven to 350 degrees F.
Line a rimmed baking sheet with parchment paper.
Arrange the soda crackers in a single layer, covering the entire pan.
In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir continuously until the mixture comes to a rolling boil.
Let the mixture boil for 2–3 minutes, stirring constantly as it thickens and caramelizes.
Carefully pour the hot toffee evenly over the crackers.
Place the pan in the oven and bake for 10 minutes.
Remove from the oven and immediately sprinkle a mixture of white and chocolate candy melts evenly over the hot toffee.
Once melted, spread the chocolate, swirling together as you go, using the back of a spoon.
Top with crushed mini eggs while the chocolate is still warm.
Allow the pan to cool at room temperature, then transfer to the fridge for about an hour to fully set.
Once firm, break into bite-sized pieces and enjoy.
