Gloria’s Ravioli with Tomatoes, Asparagus, Garlic, and Herbs
Ingredients
1 package (9 oz) fresh or frozen cheese ravioli
1 cup cherry tomatoes, halved
1 cup asparagus, trimmed and cut into 1-inch pieces
3 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon dried Italian herbs (or fresh herbs like basil and parsley)
Grated Parmesan cheese for serving (optional)
Directions
Cook the Ravioli: Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the ravioli.
Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the asparagus and cook for 3-4 minutes until tender but still crisp.
Add the Tomatoes: Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they soften slightly. Season with salt, pepper, and dried herbs.
Combine with Ravioli: Add the cooked ravioli to the skillet, gently tossing to combine with the vegetables. If the mixture seems dry, add some reserved pasta water to achieve your desired consistency.
Serve: Plate the ravioli and vegetable mixture, topping with fresh herbs and grated Parmesan cheese if desired. Enjoy your delicious dish!
