Making Grub with the Dub – Episode 40 – Layered Salad
Ingredients
12 oz. pkg frozen peas
1 small head iceberg lettuce, chopped
1 1/2 cups assorted peppers, chopped
1/2 medium Spanish onion, finely chopped
4 stalks celery, sliced diagonally
1/2 small cauliflower, finely chopped
1 small bunch radishes, thinly sliced
1 3/4 cups mayonnaise 1/2 cup sour cream
1 tsp sugar
1 1/2 cups shredded cheddar cheese
Bacon bits
Cherry tomatoes
Instructions: Blanch peas for 1-2 minutes. Drain and let cool and dry. Line the bottom of a 9×13 dish with lettuce. Over lettuce layer separately pepper, onion, celery, cauliflower, radish, and peas.
Combine mayonnaise and sour cream. Spread over top layer of salad. Sprinkle with sugar and cheese. Cover and refrigerate at least 8 hours. Just before serving sprinkle with bacon bits. Then garnish with halved cherry tomatoes.
